• 1 lb large shrimp, peeled and deveined
• 2 tbsp coconut oil or olive oil
• Zest and juice of 1 lime
• 2 tbsp shredded coconut, optional, for coating
• 2 cloves garlic, minced
• 1 tsp honey or maple syrup, optional
• Salt and pepper, to taste
• Skewers, soaked in water if wooden
• Lime wedges, for garnish
• Chopped cilantro, for garnish
1. Whisk the Marinade
Stir together the coconut oil or olive oil, lime zest, lime juice, garlic, honey or maple syrup if using, salt, and pepper. Fold in the shredded coconut if you want the added texture.
2. Marinate the Shrimp
Add the shrimp to the lime mixture and toss until evenly coated. Let the seafood rest in the marinade for 15 to 20 minutes.
3. Thread the Skewers
Arrange the marinated shrimp on the skewers with a little space between each piece. Keep the pieces evenly positioned so they cook at the same pace.
4. Grill Until Opaque
Heat the grill to medium-high. Cook the skewers for 2 to 3 minutes per side until the shrimp turn pink and opaque, adding a little optional shredded coconut during grilling if desired.
5. Finish and Serve
Transfer the hot skewers to a platter. Serve immediately with lime wedges and chopped cilantro.
