Preparation
Step 1: Making the Caramel
In a saucepan over medium heat, combine the sugar and water and let it dissolve without stirring.
Cook until you obtain a golden caramel and immediately pour it into the bottom of a large cake pan, making sure to cover the entire base.
Let it cool until it hardens.
Step 2: Preparing the Flan
In a blender, blend the sweetened condensed milk, evaporated milk, eggs, and vanilla until smooth.
Carefully pour the mixture over the caramel in the pan.
Step 3: Preparing the Chocolate Cake
Preheat the oven to 180°C (350°F).
In a large bowl, combine the sugar, flour, cocoa powder, baking powder, baking soda, and salt.
Add the milk, oil, eggs, and vanilla, beating until the ingredients are combined.
Gradually add the hot water, mixing until you have a smooth, homogeneous batter. Pour the chocolate batter over the flan mixture in the pan.
Step 4: Baking in a water bath
Place the pan inside a larger pan of hot water to create a water bath.
Bake for approximately 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let cool to room temperature. Then, refrigerate for at least 4 hours (ideally overnight) to firm up.
Step 5: Unmolding and serving
Run a knife around the edges of the pan to loosen the cake.
Place a large plate over the pan and carefully invert it to unmold.
