Although they may seem complicated, these fritters are quite easy to make, and the result is totally worth it. I'll explain everything from how to activate the yeast to how to fry them so they're golden brown, and I'll give you all my secrets to make them irresistible.
Ingredients
To prepare more than 40 fritters, you will need:
1 kg of all-purpose flour (0000): the base of our soft and fluffy dough.
400 ml of lukewarm water: ideal for activating the yeast.
100 g of margarine: melted and just warm, for softness and flavor.
2 eggs: help make the dough lighter.
120 g of sugar: for a balanced sweetness.
1 teaspoon of vanilla extract: aromatic and classic.
Zest of 1 lemon: a citrus touch that makes all the difference.
50 g of fresh yeast: essential for our little balls to rise properly.
Optional: dulce de leche or pastry cream to fill them after frying.
